GENERAL RECOMMENDATIONS FOR ICE CREAM & SORBETS
- Substitution: Replace sucrose and dextrose entirely with Nesugar on a 1:1 basis.
- Sweetness Adjustment: After the first batch, adjust sweetness by reducing Nesugar by 50 grams at a time until optimal flavor is achieved.
- Formula Ratio: Ensure Nesugar makes up 15–20% of the total formula. Add 2–3% powdered milk if needed for balance.
